In Andalasia, Happily Ever After deserved the capitals. It was a place. It was a palace and a resort and a lifestyle. It was, on the whole, Giselle suspected, a wonderful but shallow place. Certainly there was nothing bad there. That would have defeated the point.
Whereas New York was nowhere near Happily Ever After and sometimes she fought with Robert and it always bothered him when she made clothes out of the curtains, even if they were really pretty. And there was dishes to watch and homework to help with and so much more here that would be in Andalasia.

And Robert, because he made it his goal to give her small Happily Ever Afters, one after the other, every day.
